Until I saw the Cuisipro Mandoline, my newest favorite slicer was the OXO Good Grips Complete Grate and Slicer Set. Nice, lightweight, portable, with storage for the blades inside the vegetable holder. It looked good and even though I could tell it would not last forever, I liked what it did. And then along came Cuisipro, big and brawny, handsome and up to the job. There you go: my second marriage all over again.
Anyway, I switched over to the Cuisipro and like it very much. It has Includes three cutting blades with dual surfaces. YOu can slice, make those crinkle cuts and waffle cuts, or you can grate or julienne. The weight is nice. It does not wiggle around on the counter and it's sturdy as all get out. You slide in the blade, turn the key and you're good to go. The handle is slip-proof, you get a big knuckle guard (essential for people like me who are now officially down to the bone). With five cutting options you can do a lot with the Cuisipro. Even better, you can adjust the thickness from paper thin to zoftig. I like my potatoes with a little heft to them when I make a salad, but I'm thinking of doing some home-made chips and this is going to make it possible. Because, you now, I do need that essential second source of chips. If Frito-Lay ever decides to top playing fast and loose with my arteries, I need a back up system.
Anyway, I have tried the Cuisipro on a bunch of different foods. First out was a big bowl of semi-kim chee, which is a kind of fermented Korean cabbage slaw that I didn't ferment. It had sliced onions, napa cabbage, radishes, carrots, and other stuff along with hot peppers, fish sauce and any number of other herbs and spices. It was pretty good tasting, and the Cuisipro came through the challenge with no problems. Since then, I made some carmelized apples and onions which were a cinch to slice, and the next project is a truck load of potato salad, with a cart full of onions and maybe some carrots and other things that look interesting. With bacon and mayo and vinegar and boiled eggs. Traditional plus bacon, which is the international term for "more." The Cuisipro is big and strong, does what you need it to, makes boring things like slicing your way through a ton of potatoes less unpleasant. The price is $39.95 ($10 more than the OXO, but this looks like it will last longer, so that's a wash). Storage is easy...the mandolin is flat and I put the blades in a plastic bag underneath. It will take me months to lose them all.
So, for a good looking, heavy duty slicer that is easy to use, with blades that are a cinch to install or release and sharp enough to tackle what you want to slice, I don't see how you could go wrong with one of these. On the other hand, that third marriage didn't work out so well: I tend to be an optimist.

I chose Cuispro Hand Held Mandoline because I thought it would be a more compact and easy to store slicer than the ones I currently have:
Swissmar Borner V-1001 V-Slicer Plus Mandoline
Zyliss 4-in-1 Slicer and Grater
. The Borner is beginning to crack after 12 years of use, and the Zyliss has blades that are difficult to remove quickly, since the carrier telescopes in and out for the various blades to be fitted. Unfortunately, the Cuispro is NOT going to replace either of these as a good alternative.
Removing the label from the coated food surface is a pain-Krud Kutter, Goo Gone, Simple Green and application of the cleaner I use for my non-stick skillet all failed to eradicate this sticky substance. Then, after giving removal up as hopeless, I had a hard time taking out the julienne blade so I could make simple slices. I was afraid that I would wind up julienne-ing part of my hand before that insert came out. Once the mandoline was set for slicing, I get my potatoes ready, cut in half and mounted on the handguard. I dial in the thickness I wanted, and got busy slicing-weird, uneven slices that would jam in the blade. My husband tried with similar results. Carrots provided the same end product, weird chunks of varying thickness.
The one thing I like about this mandoline is the thickness dial. It would be convenient to be able to vary the thickness of slices without having to switch to a new blade, as with the Zyliss and Borner models I currently have. Unfortunately, since I cannot get it to slice anything with regularity, I will have to continue to use the other two slicers. The learning curve on what is a pretty simple kitchen utensil should not require the effort I put into this. Three days and several pounds of uneven potato and carrot slices later, I still have not figured this thing out.
I used a mandoline at a friend's house when helping to prepare a meal a few years ago, and it easily sliced potatoes and julienned carrots and parsnips. So I was anxious to try this one by Cuisipro. This one only worked on a few softer vegetables with a couple of the blades. I had very positive results when slicing cucumbers and zucchini and the blade that made a crinkle cut and waffle cut also worked on these two vegetables. But the julienne blade wasn't sharp enough for even these items and just made mush of them or they got caught in the blades. Tomatoes just smashed up against the slicing blade as did oranges, only partially cut. Potatoes and carrots were difficult to slice. Some wouldn't slice at all, and I couldn't get the rest of them to any uniform size or shape. Most just got caught in the blades and there were a few nicked fingers trying to dislodge them. The grater blade worked on some medium hard cheeses.
The mandoline came with 2 stickers on the working surface that were so firmly attached that I had to use Goo Gone and a good amount of elbow grease to remove them. The blades store inside of the main unit which is a good space saver but they are difficult to remove except for the julienne blade. It came without a storage bag or box which really is needed, because although the blades aren't as sharp as needed for many sturdy vegetables, they are sharp enough to cut hands or fingers.
I'm disappointed in this product. I'll use it for slicing cucumbers, squash and other vegetables with that same texture, but at this price I wouldn't recommend it for those limited uses.

I’m an amateur cook, big emphasis on the “amateur.” Slicing and julienning and grating and waffling are among my least favorite things to do. So this Cuisipro hand held mandoline appealed greatly.
First, the pros: it’s compact and flexible. There are three separate blades (slicing/ridging…julienning…waffling/grating), which are very easy to interchange. And there are also six thickness settings, which can be adjusted with a push of a dial. If you’re looking for ease and convenience, this mandoline offers both in spades.
I immediately tested it out on a carrot and an onion for a salad I was preparing. Getting smooth and consistent results took time and practice. At first, it wasn’t simple to press the food into the prongs of the hand guard (the food kept breaking loose even after the plunger rose to press into the food). Once the carrot/onion were firmly attached, I used quick downward strokes (which worked out fine), but even then, the last few strokes produced oversized pieces.
Additionally, the mandoline was a bit challenging hand rinse. I had to remove each blade, be conscious of not cutting myself, and be diligent about making sure every thin slice of food was removed. There is no platform or box for easy storage.
At the end of the day, my opinion is mixed. The Cuisipro mandolin is compact, flexible, and great for quickly slicing food. But results aren’t always consistent (without practice) and cleaning takes time. The accompanying instruction guide is a real help.

My first reaction after finally getting it out of the package was "Fantastic! Finally!" Very well thought-out handy kitchen tool: The thickness is adjustable with a dial on the side. The cutting blade deck stays steady and the sliding side adjusts. The blade in the solid place moves in and out from the right side and can be reversed for julienne or straight. The second blade sitting in front of the primary, larger, blade has vertical blades with 1/4-inch spacing reversible to 1/8-inch spacing moves in and out from the left. This blade can be removed for slicing or inserted for dicing (or long strips by removing the larger flat/julienne blade). Back toward the handle a grater is hidden inside under the moveable deck. The grater can be placed in the flat/julienne blade slot or used separate from the device.
All parts remove easily for cleaning -- yeah!!! The handle and the opposite end both have a rubber coating making the handle easier to hold and the opposite end of the device safer to place on breakable containers or not scratch metal containers. It fits easily and well on a wide range of container sizes for slicing/shredding. An adjustable hand-protector that slides very nicely on the side rails of the platform is also included.
It is made with a light-weight synthetic material with metal blades. The blades are also not heavy enough to do heavy-duty cutting/shredding but are very adequate for fruits and vegetables to prepare smaller quantities. To prepare produce for canning or freezing I believe a sturdier mandolin would be more appropriate and successful for a longer term use. I could be wrong but would rather err on lighter use side and have it available for a long time. The body and hand guard are dishwasher safe; the blades should be hand rinsed and dried.
As with all things Cuisipro I have used, it is well thought-out for great function. Love it and would recommend it to anyone.

I didn't even know what a mandoline is before I got this Cuisipro model. I had missed my long-gone Veg-O-Matic, but this unit does nearly everything the Veg-O-Matic did, with the added advantage of being hand-held. With the Cuisipro, you can slice, crinkle cut, waffle cut, julienne in two thicknesses and grate, using the appropriate snap-in attachments.
I found that the Cuisipro did its job quickly and easily. Thanks to the multi-language Owner's Manual, I was prepping for supper in no time. The included hand guard and plunger device holds your food item as you slice. Use a quick downstroke, and lift slightly on the up stroke for best results. Also, it's best to use only the freshest and firmest vegetables, as riper, softer ones will not slice as well. Slice thickness is adjustable from 1 to 6 millimeters. Parts are said to be dishwasher safe, but hand-washing of the blades is recommended by the manufacturer.
The Cuisipro, designed in Canada, is made in China. It's mainly plastic, but the blades and slicing platform are stainless steel. The soft-grip handle is comfortable to hold, and the non-slip feet have a Bowl Notch for slicing over a bowl. I wish the handle had a hole at the end for hanging, but that is a minor point. Though the blades are quite sharp and overall construction seems study enough, I do wonder about the Cuispro's long-term durability. Maybe I shouldn't, because this device carries a 25-year warranty. In any case, this relatively inexpensive kitchen device is versatile, and will save you a great deal of prep time when preparing meals. I recommend it.

This is definitely an improvement from the previous versions of this device, but there still are so many things that are better cut when using a knife. I have found that this more improved version has some nice upgrades. Here they are:
1) This version gives you a place to put the three interchangeable blades for slicing, crinkle & waffle cutting, grating and julienning You can now store, and lock them inside the device itself. This is nice. Not fun looking for blades in a drawer!!
2) Great to use on onions, carrots, and zucchini. Potatoes work well to julienne. And the cheese grater is fine. The food does move effortlessly on the grooved stainless steel slicing platform, and there is a hand guard too.
3) The five cutting options and six thickness settings is a plus. You turn a knob on the side of the device to change that.
4) There are soft coated handles that are easy to grip and non-slip, and it is made much better than the last version. The plastic is thicker, and much safer.
5) Clean up is easy. Rinse and go pretty much. But the white part was stained by my carrots the first time I used it.
I still use a knife on many things.... but I will now ALWAYS use this on onions! That is a plus.
First impressions (will update as continue to sue) Pros: everything comes nicely stored within the mandolin--blades are slotted into the body and can be removed and pulled out as needed
Cons: • Minor complaint: it took some doing to get the paper and adhesive off the surface. A minor annoyance, but noticeable
• Stored blades: while the convenience is nice, the problem was 1) it was quite hard to get one of the blades out after we had used it and put it back in. Quite hard. 2) the force I needed to remove/return the blades was either annoying (see above) or concerning ("am I going to break it?")
• lack of feet made it less convenient/easy to use than it could have been
• Food kept slipping off the prongs--it was rare it felt strongly attached
• some of the food--potato and sweet potato especially, were extremely hard to slice. We have an Oxo mandolin and both of us used the two with the same foods. It was obvious to both of us that the Oxo was clearly much, much easier and turned out more consistent results.
I'll update with more foods, but right now, both of us were pretty disappointed.

While once you figure this mandoline out, it works really well, however I fear that it will end up lost in a cluttered kitchen drawer of lemon squeezers, and turkey lift forks and other kitchen contraptions that never get remembered. Your instincts are going to take you back to simply grabbing a knife out of the drawer than the production of this slicer. If however using a mandoline is nothing new for you, this is a quality made one, and I had fun trying it on carrots, potatoes, cucumbers, and cheese. It really does exactly what it says it will and does it well. You have to pull out the little trays of cutting surface and slide in the next for whatever cut/grate you want. You turn a knob to raise and lower the blade for slicing. It also comes with a round knob with prongs to stick into whatever item you are slicing to hold it while you slice so you don't get down to your fingertips. I didn't have much luck using that tho, seemed added time and work, and just was a big girl about being careful about where my fingers were. The handle is very sturdy and no cheap flimsy feeling at all. Again, if this is something you feel you would use and familiar with cooking with one, this one is really an asset. If not....naw...you are going to go back to basics I think.

I debated between a 2 and 3 star review because once I was finally ready to use it on the desired item (a potato during my first use) it seemed to do OK. But there were too many hassles involved to get to that point, and I'm not sure it's worth it. Many of these issues were mentioned by others.
First, removing the Mandoline from the packaging/clam shell wasn't easy. But that was not as irritating as realizing that stubbornly adhesive stickers had been placed directly on the Mandoline. The adhesive residue did not surrender easily, and I am still not thrilled about passing food over that spot.
My safety concerns make me the most hesitant to use this routinely. In theory, it is great to have the hand guard - but it would not be difficult to injure yourself while trying to put the food on it, or if the food falls off. While it is great to have so many blade options, removing/switching them out also presents potential dangers.
In all honesty, because of the above issues/concerns, I haven't used the Mandoline enough to truly judge how well it slices a variety of foods over time.
