GLOBAL knives are made in Japan from the finest stainless steel material. The blades utilise CROMOVA 18 stainless steel, Ice tempered and hardened to Rockwell C56- 58 which holds a razor sharp edge longer than any other steel and resists rust, stains and corrosion. Best thing about it is the size, because its small its great to be able to take around with me for cooking and cutting, 2 months of use and not had to sharpen it yet and it goes through annoying objects like tomatoes with ease.
Would definitely recommend not only this knife but the brand.
It may not seem big, but its big enough to do most tasks from cutting & prepping meat, fish, veg to even use on small-medium roasts for carving.
Hand grip is also comfortable and well balanced to give a nice amount of feel when being used.
I'd highly recommend a global knife sharpener (or the cheaper equivalent) as it does lose it's edge fairly quickly but the general recommendation for keeping quality knives in tip top condition is to sharpen little and often.
I think I will add a chefs knife from this range as well, but for now, this little beauty is doing a fine job and making life in the kitchen much more pleasurable.
