Wow, this is a very sharp knife. I've only started getting into food preparation and cooking in the past couple of years as my lovely wife is Anglo French and her father was a (very good) French Chef. I've been on a couple of courses, butchering and sausage making and my next course is 'Knife Skills'. That said, my wife has taught me pretty well and I can now slice and chop like a semi pro. This knife just 'feels right'. It is razor sharp, well balanced, it feels very controllable and for the first time I was able to cut spring onions length ways and transparently thin. My favourite knives were my trusty Santoku, fillet and boning knives, but this is now way up front.
I own some very expensive and well known knives such as wusthof and I have used many others such as shun. This is the best so far. I am serious when I say this knife is so sharp that just resting it on an onion slices it. Its frighteningly sharp. Only used it for a week but holding up well. Great tool. My new go to. Incredibly versatile
The edge on this cleaver is very sharp, and I have used it for vegetables and meat in a variety of ways (dicing, slicing, crushing etc), and have had amazing results each time. Much to my suprise I can even get incredibly thin slices of meat from this cleaver! While I was hoping that the handle would have been heavier than it was, it is still very easy to use. I use this cleaver more than anything else in the kitchen, which I feel is a good testament as to how useful it is.
Read the reviews about Mercer knives being good starter knives and saw one of the knives on Sortedfood so thought I'd give it a try. Unfortunately it arrived with a chipped blade (which appears to possibly be poor manufacturing). Hopefully I just got unlucky.
10/10 to Amazon for a quick resolution and they've sent a replacement out within a day of reporting the issue. Will update with another review re: condition of the replacement that is sent out, hoping I'll be able to drop a 5* review as the research pointed to this being a great brand.
I wasn't expecting much for the price but was pleasantly surprised. The edge was ok on arrival but not brilliant. This was definitely improved after 5 minutes on a 1000 grit stone and hasn't been sharpened since. Vegetable prep is far easier with a cleaver once you get used to adopting a different grip and slicing style. DON'T use for chopping bones as the blade is too fine and not designed for that purpose.. but it's great for slicing meat and fish .
Excellent cleaver. Only had it for a short while and have used it around 3 times a day for vegetable prep. Insanely sharpe, watch the tips of your fingers. Great feel to it and well balanced. I mainly use it for vegetable prep, also would recommend for use on all meats. I don’t recommend hacking through bones though as it may damage the blade.
great knofe for the price, sharp as feck so get a jubo pack of plasters ordered as if you make a mistake with this fella your gonna loose a finger. only down side is the handle is a little slim, even if it was indexed a little it would be better but still a worth while purchase
This is so good that I bought another one. It's so light and very sharp. Cut through veg and meat with ease just like butter. My friends have also asked to me get them it too. Please make sure you don't chop bones as this sort of meat cleaver isn't designed for it.
