Razor sharp out of the package, but does NOT hold a good edge. I don’t know if I got a soft one, but the edge pits easily. Glad this was inexpensive. This is a throwaway. Very disappointed because I usually like Mercer Culinary knives.
Too easily maneuvered. I couldn’t resist the affordable add-on price I got this at but it’s too flexible of a knife for me. It’s really only appropriate for soft fruits like peaches, apricots or tomatoes. It’s very sharp but as flexible as a fillet knife.
Extremely Sharp knife right out of the box. I was really impressed. After the first initial use, the sharpness faded quickly. By the third use, I had troubled slicing through tomatoes. These knives had to be sharpen constantly prior to each use.
Bought this one as an alternative to more expensive Henckels to have an ordinary chef's knife you can actually sharp. It came very sharp out of the box, worked fine but began to rust after a month of daily use and delicate wash. That's why only 3 stars, sorry.
This knife is larger than I thought. The handle is big so it makes it more difficult to maneuver. The blade is wider than I expected and has no flexibility. I think I am happier with my old clunker knife.
WARNING!!!! I cut my finger immediately on the tip when I used this little knife when I first got it!!! And my daughter cut her finger really bad on this little knife this morning which required two Band-aids and it still bled through!!! There should definitely be a red warning in CAPITAL letters that this is extremely sharp!! It is much, much sharper than other knives I’ve purchased.
