Mercer 3.5" Paring Knife is very very sharp like a sword; Excellent quality. Handel is very comfortable and good size to hand. My wife like it. I ordered two of them. Highly Recommend, watch kids touching it, its really sharp.
My favorite paring knife that I had for decades was somehow lost. I had a hard time finding a replacement that was the right size but also not junk. I stumbled across this Mercer knife on Amazon. Its cost was less than $3, but it was very well reviewed. It turns out to be a small miracle. It's made of top-grade cutlery steel and is delivered literally razor sharp. It holds that edge quite well. Value, defined as quality divided by cost, is extremely high. I'd recommend Mercer knives without reservation if they're all like this little paring knife that was priced so low as to be almost free.
I've been using Cutco knives for years; however, each knife runs around $100 or more. My husband recently broke off the tip of my Cutco paring knife when he decided to use a $100 knife as a screwdriver. Thus, I've been on the hunt for a replacement at a reduced cost just in case he can't find his screwdriver again. Ran across this little knife on Amazon, decided to give it a swirl and my life has totally changed. This thing is fantastic. Smooth cut, extremely sharp, cuts with very little effort, comfortable handle, comes in assorted colors and under $10. I love to cook and I generally prepare at least one home cooked meal every 1 to 2 days...so knives are a staple in my household. After purchasing the first one, I ordered 2 more just to have on hand because it is so great. Goodbye Cutco, Hello Mercer. Will not buy any other knives than this brand going forward.
I've bought several paring knives that were an epic fail when it come to peeling potatoes or turnips. I have rather small hands and most either had too big of a handle and/or the blade was too dull.......making the task awkward, uncomfortable, and unsafe. This little knife is super sharp and small enough to make quick maneuvers around your spuds. I haven't had it long enough to know how well it sharpens when needed but, at this price, I'll just buy another!
