Scrambled Eggs & Smoked Salmon Recipe
TruffleHunter Black Truffle Slices, Sea salt and freshly ground black pepper, 12 large eggs, 50g cold unsalted butter diced, 4 tbsp double cream, 1–2 tbsp snipped chives, 300g smoked salmon slices
Step 1: Break the eggs into a non-stick pan. Place the pan on the hob at a low heat and add a few knobs of butter. Stir the eggs frequently using a wooden spoon to combine the yolks and whites.
Step 2: Take the pan off the heat and remove the egg from the pan once it has started to scramble. Return to the heat for about 5-6 minutes, until the mixture is moist and soft.
Step 3: Once the eggs are almost cooked and some more butter and seasoning and stir in the cream. Remove from heat and fold through the chives once the butter has melted.
Step 4: Add the scrambled eggs onto the slices of smoked salmon, add the truffle carpaccio on top and serve immediately.

Cook the spaghetti in boiling salted water.
Meanwhile; soften thinly sliced red onion in plenty of olive oil, add 1 teaspoon of truffle slices per person.
Fry on a medium heat for 3-4 minutes then add a "glug" of white white and reduce for a couple of minutes.
Pour a table spoon of the water from the spaghetti and 50g of butter into the truffle mix and keep on a low heat.
Drain the spaghetti and add to the frying pan, coat the spaghetti in the truffle mix and serve.
