Other bread books have been disappointing. This is the first bread book I’ve been blessed to have and own and be guided by, written by a man who understands the process and experiences of what it’s like to first start off baking homemade artisan bread. He explains the chemistry and process in its truest form, but does it in a way that non-scientists can clearly grasp the concepts. The recipes are tremendous yet simple enough that it’s not daunting. Ken Forkish is a blessing to us all. Buy the book and make your bread. You won’t regret it.
