Ken provides a real world book here that delivers tips and support aplenty, diving down into the science and the art of bread making. I especially like the way he summarises recipes with regard to time, allowing you to easily know when to start the process of a bread recipe, knowing exactly when the finished product will exit the oven. Fantastic photograghy, and every recipe I have attempted has been a success. This is my bread bible now. Complete with flour and water and levain stains, it will serve me well into the future I am sure.
