This is a beautiful book. Beautifully presented with very appealing recipes. However I have made three dishes from it and they have been mediocre at best and one went straight in the bin. Can anyone suggest a recipe that I really should try.? I love food from the region so it's not that. I just seem to have chosen really bad recipes to try first....
Quelle frustration !
Great recipes but the book is poorly written with some glaring errors. I generally stay away from Phaidon cookbooks because they seem overpriced and based on my experience with this book I would say that assumption is correct.
I'm a huge cookbook junkie. I have maybe 20 of them (and I'm a grad student). I think this might be one of my least-used ones. The recipes often involve a large number of ingredients (some around 20-25) and take MUCH longer than you think they would (and always longer each recipe's time estimate is on the page). I'm not a slow cooker. I get through kitchen tasks (eg. chopping) etc quickly, but this book somehow makes the time pile on. Some of the recipes require multiple stages of preparation - eg. chop onions, fry them, then blend them with some other ingredients to make a patty, which you then go on to fry again. You can see how the time and number of dishes involved in making a meal grows. If you're looking for an intro into middle eastern cooking and hoping to cook a meal in less than 1 hour, this will not be for you.
I was very disappointed in this cookbook and don't understand all the raving reviews. I am a relatively experienced cook and was expecting this book to compile the best, detailed recipes of vegetarian mideast cuisine that do not include, for example, in the recipe for ful mudammas instructions to buy a can of ful--I already do that! I will be returning the book.
