Arrived and came out of the box shaving sharp, which is impressive for a pretty cheap knife, and he holds an edge really well. The blade is alittle too flexible for me, though this can be useful for some. I have some pretty expensive knives and this holds its own against them, I actually feel like this is a better knife overall then my Global G2, which is really saying something. If your looking for a decent knife for a home kitchen, your first Chef's knife, or a "beater" knife for occasional but rough use in a busy kitchen, this is a really good option. I think i've sharpened it on a whetstone about 4 times in the year or so i've owned it, and that's kept him razor sharp the whole time. Of the many knives in this price range i've bought and used, the only one to come close is the Stellar James Martin Santoku, which is alittle cheaper but basically arrives blunt and you'll need to put some time into it to get anywhere close to a Victorinox blade, both of these knives will handle a 15 degree Japanese style edge nearly as well as a VG10 knife, which is what I have as my primary knife, though that one did cost nearly 4 times as much, which is rare for a western style knife that usually come with steel far too soft to convert to such a fine angle.
For the price, id give an easy 9/10. The only reason it's not a 10/10 is that i have pretty large hands and find that since the blade is a bit on the narrow side, i occasionally graze my knuckles on the chopping board when rocking this knife in the traditional cheffy way, it may be better suited to push/pull cutting andslicing then up and down chopping because of this.
I'll start off by saying as soon as it arrived I tested how sharp it was...on my thumb...this was immediately regretted as I was bleeding heavily! So its sharp, and I am less than intelligent! I've been a keen chef all my life and have worked in professional kitchens and so have always been spoilt with good quality knives and other utensils. So I appreciate a good all round chefs knife, and this really is good, I have only played around with it once but it has a good grip, and a nice curvature for fine chopping herbs and chillis. It cut onions with really nice smooth cuts, and went through some raw beef steak like it was butter. The only slightly negative thing I would say is that it is quite light, which I am not 100% sure I like. But over all it is a really good knife that is at a great price for what it is, Highly recommended!
This is the first time I have ever bought a better quality knife as I have always made do with cheap supermarket ones. It is now my most treasured kitchen gadget & makes cutting & slicing an ease. It's surprising how much time & effort is saved by having the correct tool for the job! Well worth the money - don't bother wasting money on a larger set of knives when this will do the job of any kitchen cutting task. Used for preparing vegetables, slicing bread & portion ingredients meats.
I have worked as a chef for over 8 years. For 6 of those i have used these knives. I will never use another knife. Absolutely the best value for money you will get for a chefs knife. I am not even a chef anymore, but I still recommend these knives to anyone who needs one. The wooden handle just makes it.
Bought as a Father’s Day gift and he was very happy with it. It arrives slightly blunt but after a good sharpening it is a great versatile knife. It’s brilliant for the price for those who do not want to invest a fortune in chefs knives.
