This is a review for Mercer 4" Deba with wood handle. The knife blade is pretty solid, so I have give a 5 star for maneuverability (one has to know how to use a single beveled Deba - it is not for your everyday all-purpose chopping). My issue with it was the quality and design of the handle. The wood handle was not finished, so unless oiled, there is a risk of food and hand safety. More importantly, the part where the blade is inserted in the handle is not sealed, there is a gap between flat blade and round handle. That is definitely not food safe. Another issue I had was that the light wood part of the handle was not flush with the black ferrule, which was quite uncomfortable while working with the knife. Hence, I don't think I will be gifting it to anyone. Deba is a specialized tool for cutting through at filleting fish, so not versatile if you were wondering. I have returned the 4 inch and bought the 6 inch with NSF (rubber) handle. The handle seems food and hand safe.
really like it, very sharp and great for cutting veggies. But the tang became loose after two washes. and it's bothering me soo much because of it. Also it didn't have a coating for the wood, wish is discouraging. Dont have any wood stainers myself so I just rubbed it with some oil and sandpaper to smooth it out a bit more.
I've been eyeing nakiri knives and thought I would try this one out since the 7" knives are harder to find locally than the 5", the price was pretty low and Mercer is a reputable brand. However, nakiri knives are supposed to be so sharp it should be used to slice extremely thin pieces of vegetables; this one is dull enough I can press my fingers pretty hard against the edge of the blade and it just indents- if it were sharp, I wouldn't dare do that. The handle is unfinished wood that still shows some of the flat planes when it was rounded so it isn't evenly rounded, but I do like the way it looks and feels as I was expecting it to be kind of rustic. I like the weight of the knife but would not buy from this particular Mercer line again.
Update. This knife was used on a daily basis cutting, chopping slicing. Works very well; but it the cutting edge did not remain true. When we reached out to Mercer Cutlery, with out concerns. We were ignored. So while the knife is awesome, their after sale service leave something to be desired.
Super sharp, have almost lost a finger a few times. Versatile knife that can do many things. In the hands of a master (my girlfriend) get amazing cuts very quickly.
