Super pro knife, would recommend for a chef or cooking enthusiast. Full tang, perfect weight, feels great to hold. I cure alot of meat, and this knife is perfect for precision slicing. Haven't needed to sharpen since I bought it. Very impressed, compares well with my old chef's knife a Wusthof.
This knife is just good value. I purchased it when it was on sale at CA$50. The edge is sharp, the handle is well-made and the spine and heel of the knife is polished to a smooth finish so it won't hurt your hand (not even my $100 Japanese hand-made knife has that). The blade face is also quite thick and you can use it for scooping and transferring. It is a typical "german profile" with large belly, good for rock cutting but if you use push cutting, there might be a problem with "ribboning". Nonetheless, it is superb value. Note that it is made in Taiwan, if you care about these things, though I don't think it is any worse than German or Japanese blades in quality. Love it.
I have tried many 8" chef knives. Some expensive and some budget. It is no surprise that Mercer is a culinary school favorite. Knuckle clearance, blade height, belly curvature, weight distribution, handle comfort, polished or rounded spine for comfort - Mercer has it all. They didn't spend any money on gimmicks like fancy (and uncomfortable) handles or weird blade designs. This is beyond anything a home cook could want, this is a professional grade chef knife at a home cook price.
Had this for three weeks, and performed exceptional. Keeps its edge and nice balance and weight. Stupid me, I wanted to see how strong it was and used it to cut a lobster in half. Big mistake! hope I can get the edge back. Tells me that the steel isn't as hard as I thought. Gonna move up to a higher quality blade when I can. Update Aug 2019; Received replacement knife for the one I returned. I really like the feel, balance and the weight. Unfortunately, it just doesn't cut it. It came a little duller than the original one I returned and doesn't keep its edge for long. To much maintenance for a basic kitchen knife. I really tried hard to like this one but as they say "You get what you pay for!"
