I purchased this carving knife along with the bread knife pictured and also find the quality, sturdy and very sharp non flex blade keeps you in control of whatever you choose to slice because it does slice through with ease no matter how thick or thin. Good handle control, length. I just along with the bread knife rinse it with some soapy water and wipe it with a paper towel, no need for the dishwasher. Hopefully you’ll be impressed like I am and will be for years to come. Very well made and not expensive at all.
I caught on to this product after watching a few professional chefs use Mercer on cooking shows. Over the years I have watch the quality and standard of a certain German knife that I was issued in culinary school go down. So I was looking for a high carbon steel knife. This knife has a easy grip in the hand that gives you lots of control. It passed the paper test and slicing thru tomatoes was a breeze. Just goes to prove that you don't have to spend alot to get a good quality chef knife.
This chef's knife is great, very sharp and easy to use. My first use of it was to dice onions, and it glided through onions like a Japanese samurai sword. My only concern is that it feels as big as a samurai sword. I cheaped out and chose the 10 inch model rather than the 8 inch size, because it was around $15 less expensive. I think i'll get used to it, but I probably would have preferred the 8 inch size as a general use chef knife. It's too big to fit in a knife block I have and too scary looking to leave out on a magnetic wall holder like the chefs do, so after I wipe it clean I store it in it's plastic sheath and cardboard case it came with - safely in the drawer.
Hello I used this knife to cut up some steak and it was super sharp and cut through the raw steak like nothing. I got some beef rub with paprika in it on the white handle, I was worried it was going to stain the white plastic handle but It washed right off with a bit of soap and water no problem. and the handle is well engineered and feels great in your hand with excellent grip it also has some raised bumps at the front of the handle that allow for increased grip if you have bloody or greasy hands from cutting raw or cooked meats. I thought the upward curve on the blade was extreme but after using it it works very well and was designed to be that way to be more ergonomic and to reduce hand fatigue when cutting. overall a great knife appears to be well made and of good materials. super sharp, great gip and comfortable to use. I highly recommend this knife and I would buy another Mercer Culinary knife in the future GREAT VALUE FOR THE SMALL COST. GREAT KNIFE.
Long enough to get the through the wide boule loaves. It wasn’t until I sliced through the first loaf with this knife I realized how terrible our old bread knife was. Sliced through the crispy crust without crushing the loaf and glided through the centre like a knife through warm butter.
