Lo uso hasta para cortar fruta, es muy filoso y semi-flexible. Lo único es que no puedo descuidarme porque si me podría cortar un dedo. Para la carne ha sido maravilloso, puedes usar la punta para abrir paquetes cuando viene al vacío o para entrar entre pellejos. Compro mucha carne en pieza completa y la corto yo mismo, esto lo hacía con un cuchillo de chef muy bueno, pero al ser completamente rígido me costaba trabajo no llevarme más carne que grasa o pellejos. Realmente recomiendo este cuchillo, llevo 3 meses usándolo casi diario y no he tenido que afilarlo realmente.
I have always been a fan of Zwilling J.A Henkle's hardware and knives all my life . I still stand by Henkle's but this knife has impressed me, ( not easy to do!) It is comfortable to hold and use for any application. Although 10 inch is primarily for butchering such as I use for cutting steaks from a side of rib eye or other applications, as stated above it easily slices through a loaf of bread stick and tomatoes in one stroke with very little effort! Excellent pc of hardware to add to your kitchen !
Happy with my purchase. Other reviews stated it was not sharp but I did not have that problem. I use it primarily to cut beef. I've cut small roast, trim fat off and recently used it to cut whole striploins with little effort. Glides almost effortlessly through raw meat with a little effort needed for the really stubborn areas but not much. I'm a large guy so wish the handle was a little thicker but not a real issue.
A must have for butchering beef. Holds an edge great, does need sharpening out of the package. Great weight and quality. I buy all Victorinox knives from Amazon as the quality for price is better than expected. And ships quick as always.
